1 whole chicken, cut into 8 pieces
Preparation:
1. Marinate the Chicken: In a bowl, combine tahini, garlic, lemon juice, cumin, paprika, cayenne pepper, salt, and pepper. Add the chicken pieces and toss to coat evenly. Cover and marinate in the refrigerator for at least 2 hours, or preferably overnight.
2. Prepare the Rice: Rinse the basmati rice under cold water until the water runs clear. In a medium saucepan, combine the rice, chicken broth, saffron threads, lemon zest, and orange zest. Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes, or until the liquid is absorbed.
