Kerala, a coastal state in southern India, is renowned for its vibrant culinary scene. Ingredients:

1 cup idli batter

  • 1/2 cup urad dal, soaked overnight
  • 1/4 cup chana dal, soaked overnight
  • 1 teaspoon ginger, grated
  • 1 green chili, minced
  • 1/2 teaspoon cumin seeds
  • 1/4 teaspoon turmeric powder
  • 1/4 teaspoon red chili powder
  • Salt to taste
  • 1 tablespoon coconut oil
  • 1 tablespoon mustard seeds
  • 1 teaspoon urad dal
  • 1 teaspoon curry leaves
  • 1/2 cup chopped onion
  • 1/4 cup chopped green bell pepper
  • 1/4 cup chopped red bell pepper
  • 1/4 cup chopped carrot
  • 1/4 cup chopped spinach
  • 1/4 cup grated coconut
  • 1 tablespoon chopped cilantro

  • Preparation Process:

    1. Prepare the Idli Batter: Steam the idli batter according to the package instructions.
    2. Soak the Dals: Drain the soaked urad dal and chana dal.
    3. Grind the Batter: Grind the soaked dals, ginger, green chili, cumin seeds, turmeric powder, red chili powder, and salt into a smooth paste.
    4. Cook the Dosa Batter: Heat a non-stick pan over medium heat. Pour a ladleful of batter onto the pan and spread it into a thin, round circle. Cook until golden brown on both sides.
    5. Prepare the Vegetable Sauté: Heat coconut oil in a pan. Add mustard seeds and let them splutter. Add urad dal and curry leaves. Sauté until the dal turns golden brown. Add onion, bell peppers, carrot, and spinach. Sauté until the vegetables are tender-crisp.
    6. Assemble the Dish: Place a dosa on a plate. Top with the vegetable sauté and grated coconut. Garnish with chopped cilantro.
