1 pound ground beef (or ground turkey or a mixture of both)

  • 1 pound ground pork sausage
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1 (15 ounce) can tomato sauce
  • 1 (15 ounce) can tomato paste
  • 1 (15 ounce) can kidney beans, rinsed and drained
  • 1 (15 ounce) can pinto beans, rinsed and drained
  • 1 (15 ounce) can corn, drained
  • 1 (15 ounce) can black beans, rinsed and drained
  • 1 (15 ounce) can diced tomatoes, undrained
  • 1 cup beef broth
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon cayenne pepper
  • Salt and pepper to taste
  • 1 bag (16 ounces) tortilla chips, crushed
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • Sour cream
  • Avocado
  • Cilantro

  • Preparation:

    1. Brown the Meat: In a large skillet over medium heat, brown the ground beef and ground pork sausage, breaking it up with a spoon as it cooks. Drain off any excess grease.
    2. Sauté the Veggies: Add the chopped onion and minced garlic to the skillet and sauté until softened, about 5 minutes.
    3. Combine Ingredients: Stir in the tomato sauce, tomato paste, kidney beans, pinto beans, corn, black beans, diced tomatoes, beef broth, chili powder, cumin, cayenne pepper, salt, and pepper. Bring to a boil, then reduce heat and simmer for 30 minutes, or until thickened.
